It’s Friday, Friday, Friday….remember her?

Hope you all had a fantastic week and have an even better weekend ahead of you.  If you are in Vegas this weekend look out for my shenanigans, as I will be tearing up the city for my sister’s 21st birthday.  Make sure you all keep my boyfran man company here as he will be enjoying the bachelor life and praying I don’t blow all my money on the craps table.

But for now….bask in the glory of my new favorite Etsy Shop. the wheatfield How adorable are those prints.  I am head over heels for the fresh colors and whimsy that Katie brings to all of her work.  It was hard to choose which prints I liked best because she has tons of them.  There are also lots of “State prints” although a certain show-me state was missing.  Which one is your favorite?

Statement walls have become all the rage lately.  I have yet to see one that I love more than this one… abeautifulmess  Elsie from a Beautiful Mess spent three days laboring over that beauty, and it already has me feeling totally inspired.  I need a wall in my house covered in sentiments.  I think I will choose a smaller wall though.

Speaking of Elsie, she was really on a roll this week.  Check out these pretty mismatched napkins, and dream about all the styling possibilities. elsies napkins  Dinner parties scattered with patterns and bold colors and sweet quotes.  If I wasn’t going out of town this weekend I’d be learning to sew so I could make my own set.

I have tried to eat a little cleaner these days.  I have not gone all the way to the Paleo side of things….just trying to cut out frozen dinners and refined ingredients.  Maybe live a little longer. smittenkitchen  How delish does that look?  I am craving eggs all the time now, so I want to learn lots of ways to prepare them.  Smitten Kitchen has the best photos and great tutorials that don’t seem so intimidating.

I love birthdays.  I love sending cards.  I just never remember.  Next time I do…. onelittleminute  Miranda gives you a step-by-step coaching session on folding a bill into a shirt.  Which could come in handy while in Vegas so I have been practicing like crazy.

I don’t give you all recipes very often but when I do you can guarantee that they will meet my three requirements.

1.  Super Delish
2.  Healthy or Healthier
3.  Easy Peasy Lemon Squeezy

When I ran across a recipe for “Spinach Artichoke Chicken” that is….get this….under 300 calories I was all kinds of down.  I may or may not have started drooling immediately.  The best part was, I had almost all the ingredients ready and waiting.  Like it was meant to be.

So I made it. yummy spinach artichoke chicken And I have made it twice since then.
Now I want you to make it….too pushy?

Ok, how about I think you’ll really like it and should maybe give it a try my grasshopper.

Here is what you will need: throw it all in there – 2 cups spinach
– 1/2 cup onion (you can skip it if you are anti-onion)
– 3 wedges The Laughing Cow Light Creamy Swiss cheese
-1 tablespoon fat-free mayonnaise
– 2 artichoke hearts, drained and chopped
– 1 tablespoon reduced-fat Parmesan cheese
– 1 teaspoon garlic powder
– 2 raw boneless skinless chicken breast
– salt and pepper if you want

Go ahead and lay out four sheets of foil and spray them with some non-stick spray.  Heat your oven to 375 degrees.  Now go on a hunt for your non-stick skillet….oh how I long for an organized kitchen.  Now you are ready to cook your spinach until it wilts which usually takes about three minutes.

Now I want to be all Suzie-Homemaker-ish.

So for all you girls in the same boat, I want to warn you about spinach. beware The first time I tried to cook spinach I was making a homemade greek pizza.  When I went to the store I grabbed about 20 leaves of spinach.  By the time I cooked it all up it covered about one slice of pizza, so fill your bag ladies.  Then you can use leftovers for tasty smoothies. the good stuff Now you basically take everything else and mix it all together in a bowl and throw it in the microwave.  Voila…healthy spinach dip. prep the chicken After you get all the good stuff layered into your foil, you are ready to roll that foil up.  The foil traps all the juiciness in with the chicken. final preps Once you have your foil packets all wrapped up, throw it in the oven for 25 minutes.  I am also tucking this recipe away for camping season, throw your packets over the fire and call it dinner.  Make sure when you pull these bad boys out you cut a slit in the foil to let all the steam out.  Please don’t burn yourself trying to get to the goodness. yummmmm I throw a piece of Havarti cheese over the top and serve it with broccoli and carrots…bringing the whole meal in at just under 400 calories.
Bonus…it is oh so tasty.

Has anyone else been counting down the days since March 18th, 2012?

I am totally going to be as tacky as they come in every shade of green.
I may even break out my beer mug hat…reliving the glory days.

For the girls that aren’t a teeny little thing (congrats to the ones that are) I found a really cute pair of green jeggings at JC Penny.  Bonus that they are super comfy and they have a rainbow of colors.

Ohhhh Monday…we meet again.

I’m thrilled, really.  I am.

What do you say we try to take over the world, shall we. monday matter This week is something that I absolutely needed a push on.  Internet security.  I was the girl in college that let her firewall run out and just used her computer until it shut off one day never to return again.  I never “backed up” until I met Mr. Handsome.  Really until I met Tim I was the perfect target for web creeps.

Now that I have seen these, I am stepping up my game. da truf You know your spam folder is overflowing.  All of those emails for “instant weight loss” and “income at home” and well…other unmentionables.  Some of those emails are considered phishing emails, not to be confused with catfishing.  Wink wink.  Phishing is when someone sends you an email pretending to be an established enterprise in an effort to steal your personal information.

As if we don’t have enough to worry about.  I mean I have a hard enough time organizing my free shipping coupons and tracking one-day only sales.

Here are a few quick and easy steps to help keep you safe. how to protect yourself I feel like a lot of that is common sense.  But ask me how much I actually follow.
Actually, don’t ask.  Oh the shame.

My goals today are to change passwords, cancel auto-logins, and start a habit of closing the browser.  Why does safety make life harder?
